Heute: Orecchie an Broccoli-Schinken-Sauce (Vorbereitung ca. 20min)

Zutaten für 4 Personen:

• 500 – 750g Orecchie (oder beliebige Teigwaren)
• 2-3 Broccoli
• 200g Hinterschinken
• 3dl Rahm
• 1 Zwiebel, ev. Knoblauch
• Gewürze (Salz, Pfeffer, ev. Muskatnuss)

Einen grossen Topf Wasser aufsetzten (für die Teigwaren), salzen. Orecchie haben ca. 9 – 12 min in kochendem Wasser.

Die Broccoli waschen und die Stümpfe abschneiden (die sind zu hart). Den Dampfkochtopf bis zum Siebansatz mit Wasser füllen und etwas Salz hinzugeben. Den Topf auf höchster Stufe erhitzen, bis das Ventil zu zischen beginnt. Danach sofort vom Feuer nehmen. Sollten die Broccoli nicht weich genug sein (mit dem Messer testen), müssen sie nochmal kurz in den Topf

In der Zwischenzeit die Zwiebel (und den Knoblauch) in kleine Würfel schneiden und mit etwas Öl in der Pfanne glasig braten. Den geschnittenen Schinken hinzugeben. Danach den Broccoli in die Pfanne geben (Er wird etwas auseinander fallen, das ist gut so). Mit dem Rahm ablöschen, nach belieben würzen.

Nach der Zugabe das Rahms darf die Sauce NICHT köcheln, nur auf kleiner Stufe warm behalten.

Jetzt sollten die Teigwaren fertig sein. Die Sauce unter die Teigwaren heben – Fertig.
