Weshalb? Wenn man mal wieder zum Kocken für die Familie „verdonnert“ wurde und man gerade keine gute Idee hat, kann man sich hier inspirieren lassen.

Heute: Quiche Lorraine (Vorbereitung ca. 30 min, Fertig nach 1h)

Zutaten für 4 Personen:

• 250g Mehl
• 125g Magerquark
• 125g Butter
• 200 -250g Bratspeck
• 3 Eier
• 3dl Rahm
• Gewürze (Salz, Pfeffer, Muskatnuss)

Als erstes wird der Teig gemacht: Mehl, Quark, Butter und 1/2 Kl Salz zu einer gleichförmigen Masser verkneten (am besten mit dem Mixer und Knethaken, geht aber auch von Hand), ca. eine halbe Stunde kühlstellen.

Speck in kleine Streifen/Würfel schneiden und anbraten.

Danach den Speck im Sieb abtropfen lassen (oder mit Küchenpapier trocknen)

Zum Guss: Die Eier und den Rahm zusammen mit Salz, Pfeffer und Muskatnuss gut verrühren (bzw. mixen). Es ist zu beachten, dass die Gewürze mit der Zeit absinken. Man sollte den Guss deshalb vorher nochmal kurz aufrühren.

Der Teig kann nun ausgewallt und in die Form gelegt werden. (KEINE Löcher in den Boden stechen!). Danach wird der Speck auf dem Boden verteilt und der Guss darüber gegeben.

Das Ganze geht nun für eine halbe Stunde in den auf 200° C vorgeheizten Ofen. – Fertig! Dazu kann man z.B. einen gemischten Salat servieren.
