Ein hightech-biofermentierter Göttinnentrank. Enthält Vitamine A-Z und alle Eisenspurenedelgasmetallelemente, die der Körper braucht und das Abwehrsystem stärken. Warum liest man eigentlich nirgendwo, wie man Kombucha selber herstellt? Immer nur „Masken, Abstand, Fickdich.“ Hier ein Rezept für alle, die immer noch Angst vor Viren haben. Brauzeit: Eine Woche.

Rezept

Für 1 Liter:

• Kombucha-Teepilz (wird von Freund zu Freund weitergereicht)
• 4 Teebeutel Schwarz- oder Grüntee
• 70g Zucker

Wasser aufkochen. Zucker rein. Teebeutel rein. Stehen und ziehen lassen, bis der Tee handwarm ist. Dann zusammen mit dem Teepilz in ein Einmachglas abfüllen und offen, aber mit einem Tuch bedeckt bei mindestens 20°C stehen lassen.

Die Bakterien-Hefe Kultur vergärt den Schwarztee und Zucker in ein säuerliches, sprudeliges Erfrischungsgetränk. Die leicht anregende Wirkung kann sogar Club Mate als Programmiergetränk ersetzen. Sterilität und Sauberkeit bei der Herstellung sind nicht so wichtig; der Pilz konserviert und desinfiziert sich selber. Nach einer Woche Fermentation ist folgendes entstanden:

Bakterien- und Hefestämme:

• Saccharomyces cerevisiae (Backhefe)

• rechtsdrehende (L+) Milchsäure
• Essigsäure
• Weinsäure
• Folsäure
• Oxalsäure
• Usninsäure
• Spuren von Bernstein-, Apfel, Malon- und Zitronensäure

Essentielle Spurenelemente und Mineralstoffe:

• Eisen
• Magnesium
• Natrium
• Kalium
• Kalzium
• Kupfer
• Zink
• Mangan
• Kobalt und andere Mineralstoffe

Vitamine:

Außerdem: 14 verschiedene Aminosäuren, lebenswichtige Enzyme, Gerbstoffe, die Fermente Invertase, Amylase, Katalase, Saccharase, Labferment und ein proteolytisches Ferment, antibiotische Stoffe, Alkohol und Kohlensäure.

Obwohl Kombucha-Tee säuerlich schmeckt, wird er aufgrund seiner Inhaltsstoffe basisch im Körper umgesetzt – genau wie z.B. Gemüsesäfte oder Wurzelgemüse wie Rote Beete und Kartoffeln.

Die generelle Stimulation des Immunsystems durch Kombucha zeigt sich z.B. an der Aktivierung des Interleukin-2-Systems sowie einer regulierenden Wirkung auf das Blutbild bei Patienten mit Lymphozytose oder Lymphopenie. Die in Kombucha enthaltenen Laktobazillen unterstützen die Abwehrkräfte des darmeigenen Immunsystems, das artfremde Mikroorganismen, aber auch darmpathogene Viren abwehrt. Die Immunstimulation kann antiinfektiöse Wirkungen haben und zum Beispiel verhindern, dass Pilzinfektionen wiederholt auftreten.
